Ortiz Anchovies are carefully prepared and filleted, one by one, and are caught during the spring fishing season and freshly processed in order to maintain their full flavor. They are then aged in barrels with salt for a minimum period of 6 months.

Once at their best point of maturity, they are hand-filleted one at a time and then packed in olive oil or salted. Anchovies from the Engraulis encrasicholus species are the most popular in the world. Thanks to this careful traditional preparation process, we get a premium anchovy with a compact flesh and rich flavour.

These fish taste pretty fishy and salty—which can make them overwhelming if you don’t know how to balance their flavor. Anchovies also have a fifth taste, called umami, a savory taste found in foods high in the amino acid glutamate. Anchovies are typically filleted, salt-cured and canned in oil.

The Anchovy, from the Engraulidae family, is a blue fish that can reach 15 cm in length when fully grown. Anchovies are a migratory fish, and they travel thousands of kilometers throughout their life in search of food. At Conservas Ortiz we fish the highest quality Cantabrian Anchovies.

Our Anchovie spend at least 6 months maturing. Once at their best, they are hand filleted one at a time and packed in olive oil.

Once opened, in order to maintain all its full flavor for up to five days, it is important to keep the anchovies in the refrigerator, preferably covered and submerged in olive oil, adding more if necessary.

Anchovies hold a special place of honor in the kitchen, not only because of their delicious flavor and versatility, but also because they have a number of unique properties:

High biological value protein source.
High content of OMEGA 3 fatty acids, which our body does not generate by itself.

Rich in vitamins A, D, E and K, which help strengthen the immune system.
In this case they are packed in olive oil, rich in oleic acid, which helps regulate harmful levels of cholesterol in the blood.

History of Ortiz:
Since the beginning, Ortiz history has been linked to traditional fishing and respect for the sea. The path that has taken them from being a small canning company on the Basque coast to what they are today goes through five generations of the Ortiz family, who back in 1891 began to elaborate White Tuna in escabeche in Ondarroa, Vizcaya.

At the beginning of the 20th century, Conservas Ortiz began to make its mark worldwide. Canning companies began to set their sights on Italy and countries with Italian immigrant populations such as the United States, Canada, Australia, New Zealand, and South Africa.

Anchovies were the star product. The Italians brought their “alla vera carne” salting technique (using very little salt between layers of anchovies), to Cantabria: they knew that the region’s coast offered the very best fish. Here, they could produce semi-preserved fish products and send them back to Italy.

Conservas Ortiz have great respect for tradition, coastal fishing based on the tides, and the exclusive purchase of north coast tuna which are line-caught, one-by-one. Careful handling of the fish we use yields a product distinguished by its high quality.
